Homemade Vegetable Soup

This is a really simple recipe that will feed a big family it’s super healthy & low-cost.

Ingredients

100g cabbage & leek

350g (6 carrots)

½ turnip

750g (6 potatoes) Maris Piper

1 white onion

300g broth mix

2 x stock cubes

1 litre hot water

a pinch of salt & pepper

  1. Peel & chop (dice) the vegetables.

2. Add all the ingredients to the pan,adding 2 vegetable stock cubes then add the  1.5 litres of boiling water stir until the stock has dissolved (simmer until all the vegetables are soft approx 45 min-60min) or if you are using a slow cooker (approx 2.5 hours) add a pinch of salt & pepper.

3 When the soup is ready serve with crusty bread, such a simple healthy & nutritious meal for a family.
